How to make pomegranate juice

The production process for pomegranate juice includes raw materials selection, fruit washing, peeling and seed extraction, color preservation, pulping, filtration, homogenization, concentration, sterilization, filling and cooling. Every steps requires specialized pomegranate juice machines.

Pomegranate selecting

Qualified raw materials for making pomegranate juice are supposed to be over 90% maturity. It’s recommended to use fresh pomegranate, without any pest disease, decay or mould. A rail rolling pomegranate selecting machine is helpful to improve the selecting efficiency. It can roll the pomegranates around

Pomegranate washing

Fruit washing is an essential process to eliminate the impurities and microbes, so as to ensure the quality of fruit juice. Dip the pomegranates into the water tank of fruit bubble washing machine and brush and spray cleaning machine. The tumbling water and water spray is able to remove the dust, impurities, microbes and pesticide residues completely. For those with too much pesticide residues, you can add saline solution or fatty acid detergent to water. If the surface of pomegranate is contaminated seriously by microbes, you can use bleaching powder and potassium permanganate solution to disinfect.

Peeling and seed extraction

Due to the complicated structure of pomegranates, it needs specialized equipments to remove peels and extract seeds. AGICO has upgraded the pomegranate peeling machine and achieves high production capacity, high extracting rate, low tannin content and pure juice taste. It has become ideal equipment to extract pomegranate juice and wine.
When raw materials are fed into hoppers, the crushing device crushes them into pieces, then the separating drum separate skin and seeds. The pomegranate peeling and extracting machine has the capacity from 3t/h to 5t/h.

Color preservation

To keep pomegranate juice from changing color, we need to dip pomegranate seed in color protection solution such as citric acid or VC. If there is no color preservation process in advance, the pomegranate juice may easily turn brown during pulping, and the color will get darker after a while. As VC liquid is quite expensive, citric acid is more frequently used to protect color.

Pomegranate juice extraction and filtration

Pomegranate juice extractor serves to separate fruit pulp and core, and prevent the cores from breaking in case it affect the color and taste of juice. To ensure the quality of final juice and prevent deterioration, the working condition must conform to high standard, and the parts in pomegranate juice extractor where raw materials contact are supposed to be made of stainless steel. After extracting juice from pomegranate seed, you can use filter press to remove the remnant fruit slag in juice to get purer products.

Pomegranate juice Homogenization

Under the pressure of 150-200kgf/cm2, pomegranate juice is pushed through the high pressure homogenizer, where the strong shearing force and cavitation erosion crush the fruit pulp and spread them uniformly in the juice. This process can improve the stability of pomegranate juice.

Pomegranate juice concentration

As high pomegranate juice may deteriorate under temperature and normal pressure, vacuum concentration is preferable in processing pomegranate juice. The temperature is confined between 25 to 35℃, and the vacuum degree is from 710 to 750mmHg.

Pomegranate juice sterilization

After homogenization, pomegranate juice are transmitted to pasteurizers, where the temperature is between 85-92℃, and the sterilization time is from 30 to 50 seconds.

Pomegranate juice filling and cooling

The sterilized pomegranate juice must be filled into cans instantly after the preceding process. The container must be cleaned and sterilized thoroughly to meet the sanitation standard. Condition permitting, aseptic method is more preferable . Cooling process is carried out right after filling. The more fast pomegranate juice is cooled, the less nutrition it will lose. If you choose glass bottle as container, section wise cooling down method is needed in case the uneven heats cause the bottle to break.

How to identify the quality of pomegranate juice

The color of concentrated pomegranate juice is similar with or a little darker than fresh pomegranate juice, with no brown stain. And there should be no impurities or apparent suspended solids. What’s more, qualified pomegranate juice should have the essence and taste of pomegranate and no peculiar smell.
